Ingredients
- Chickpea pizza crust
- tablespoons olive oil
- cups cherry tomatoes
- shallot, thinly sliced
- minced garlic clove
- teaspoon dried oregano
- tablespoons fresh basil (or 1 teaspoon dried)
- tablespoon balsamic vinegar
- tablespoon olive oil
- cup skitake mushrooms
- shallot thinly sliced
- cup halved cherry tomatoes
- cup halved kalamata olives
Instructions
Tomato Sauce
- In a lidded saute pan, add 2 tablespoons olive oil and heat to medium-high
- Add sliced shallots and garlic and cook for 2 minutes until fragrant
- Add basil and oregano and cook for an additional minute
- Add tomatoes and lid and cook for 6 minutes
- Remove lid and stir in balsamic vinegar
- Transfer to a blender and pulse until sauce forms
Sauteed vegetables
- In a cast iron skillet as 1 tablespoon olive oil and turn to medium-high heat
- add mushrooms, shallots and tomatoes and sauce for 5 minutes
- Stir in kalamata olives
- Transfer to a bowl and set aside
Pizza
- Apply sauce to pizza crust
- Top with sautΓ©ed vegetables
