INGREDIENTS

  • 1 head of cauliflower
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 1/3 cup tahini
  • 2 tbsp lemon
  • 1/4 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 cup ice water for thinning

INSTRUCTIONS

  • Preheat oven to bake/convention bake 425°
  • Chop cauliflower into florets
  • Toss with 2 tablespoons olive oil and spread onto parchment lined baking sheet
  • Bake for 25 minutes
  • Using a high speed blender (vitamix is best), combine all ingredients except water and blend until creamy, adding ice water last and little by little to thin
