Kale Caesar - Living with Ivey

Description

You won’t miss the eggs, cheese or anchovies with this easy, nutrient dense Caesar Salad. Hemp seeds add a nutty flavor, while proving a ton of nutrients. Just three tablespoons provide 3 grams of Omega-3 fatty acids and 10 grams of protein, along with fiber, iron, magnesium, zinc and vitamin E.

Ingredients

  • bushes of kale, de-stemmed, washed and roughly chopped
  • boxes (15oz each) of chickpeas, rinsed, drained and dried with paper towel..
  • cup olive oil
  • tsp garlic salt
  • Pepper to taste
  • cup lemon juice (1 lemon)
  • cup hemp seeds
  • tbsp tahini
  • tbsp nutritional yeast
  • tsp Dijon mustard
  • tsp capers
  • garlic cloves
  • tsp maple syrup
  • tbsp water
  • Salt and pepper to taste
  • cup lemon juice (1 lemon)
  • cup hemp seeds
  • cup soaked and drained cashews (Soaked for at least 8 hours)
  • tbsp nutritional yeast
  • tsp Dijon mustard
  • tsp capers
  • garlic cloves
  • tsp maple syrup
  • tbsp water
  • Salt and pepper to taste

Instructions

For chickpeas:

  • Heat 2 tbs of olive oil in a large cast iron skillet over high-medium heat.
  • Add chickpeas and let sit for 3 minutes, toss and repeat with the remaining 2 tbs of olive oil.
  • Once crispy, finish with garlic salt and pepper.Β
