Greek Salad - Living with Ivey

Description

Perfectly light and refreshing, and comes together in 10 minutes.

Ingredients

  • English cucumbers, halved, seeded and sliced
  • sliced red bell pepper
  • cup baby heirloom tomatoes, halved
  • cup kalamata olives
  • sliced avocado (or feta if not dairyfree)
  • cup red wine vinegar
  • tablespoons dijon mustard
  • teaspoon honey
  • teaspoon dried oregano
  • teaspoon black pepper
  • cup olive oil

Instructions

Red Wine Vinaigrette

  • whisk together adding in olive oil last and gradually to emulsify

Salad

  • Combine all ingredients in a bowl and toss with vinaigrette.
