INGREDIENTS

  • 1 English cucumbers, halved, seeded and sliced
  • 0.5 sliced red bell pepper
  • 0.5 cup baby heirloom tomatoes, halved
  • 0.13 cup kalamata olives
  • 0.5 sliced avocado (or feta if not dairyfree)
  • Red Wine Vinaigrette

  • 0.13 cup red wine vinegar
  • 1 tablespoons dijon mustard
  • 0.5 teaspoon honey
  • 0.25 teaspoon dried oregano
  • 0.06 teaspoon black pepper
  • 0.25 cup olive oil

INSTRUCTIONS

Red Wine Vinaigrette

  • whisk together adding in olive oil last and gradually to emulsify

Salad

  • Combine all ingredients in a bowl and toss with vinaigrette.
