Ingredients

  • sweet potato, peeled and spiralized
  • tbsp olive oil
  • cup soaked cashews (either soaked in cold water overnight in the fridge or soaked in boiling water for 5 minutes and drained)
  • cup nutritional yeast
  • grated garlic clove
  • juice of lemon
  • tsp Dijon mustard
  • tbsp tahini
  • tsp ground turmeric
  • tsp salt
  • tsp black pepper
  • cup hot water to thin

Instructions

"Cheez"

  • Add all ingredients, except water and sweet potato, to a high speed blender
  • Blend to combine, adding in water last and gradually until sauce forms
  • Set sauce aside

"Mac"

  • Using a cast iron skillet, add olive oil
  • Add spiralized sweet potato noodles and sauté for 4 minutes, until slightly golden and softened
  • Combine with cheez sauce, transfer to plate
  • Garnish with fresh basil leaf
