INGREDIENTS

  • 1 sweet potato, peeled and spiralized
  • 1 tbsp olive oil
  • 1 cup soaked cashews (either soaked in cold water overnight in the fridge or soaked in boiling water for 5 minutes and drained)
  • 0.25 cup nutritional yeast
  • 1 grated garlic clove
  • 1 juice of lemon
  • 1 tsp Dijon mustard
  • 1 tbsp tahini
  • 1 tsp ground turmeric
  • 0.12 tsp salt
  • 0.12 tsp black pepper
  • 0.25 cup hot water to thin

INSTRUCTIONS

"Cheez"

  • Add all ingredients, except water and sweet potato, to a high speed blender
  • Blend to combine, adding in water last and gradually until sauce forms
  • Set sauce aside

"Mac"

  • Using a cast iron skillet, add olive oil
  • Add spiralized sweet potato noodles and sauté for 4 minutes, until slightly golden and softened
  • Combine with cheez sauce, transfer to plate
  • Garnish with fresh basil leaf
