Roasted Delicata Squash - Living with Ivey

Description

Vegan, Gluten-free, and just a few simple ingredients. Delicata squash is one of my absolute favorite things on the planet. It’s sweet like a sweet potato, but with far less carbs (7g a serving versus 40g!) and is rich in fiber and calcium. I like to roast it until its browned and caramelized and it tastes like candy!

Ingredients

  • delicata squash
  • tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375Β°
  • Scrub exterior of squash to remove any dirt. (Leave the skin on!)
  • Slice each end off the squash and cut lengthwise to open squash
  • Scoop out seeds of the squash and slice into even crescents (about 1/3 inch thick)
  • Toss with olive oil and spread evenly onto parchment lined basking sheets (might require two)
  • Bake (or use convection if you have) for 40 minutes, flipping halfway
  • Garnish with salt and pepper and fresh parsley (optional)
