Vegan, Gluten-free, and just a few simple ingredients. Delicata squash is one of my absolute favorite things on the planet. Itβs sweet like a sweet potato, but with far less carbs (7g a serving versus 40g!) and is rich in fiber and calcium. I like to roast it until its browned and caramelized and it tastes like candy!
Ingredients
delicata squash
tbsp extra virgin olive oil
Salt and pepper to taste
Instructions
Preheat oven to 375Β°
Scrub exterior of squash to remove any dirt. (Leave the skin on!)
Slice each end off the squash and cut lengthwise to open squash
Scoop out seeds of the squash and slice into even crescents (about 1/3 inch thick)
Toss with olive oil and spread evenly onto parchment lined basking sheets (might require two)
Bake (or use convection if you have) for 40 minutes, flipping halfway
Garnish with salt and pepper and fresh parsley (optional)
