I fed these to my husband and his response was β€œWait, these taste better than actual french fries and they’re healthy?!” Similar to other root vegetables like carrots, parsnips are sweet but nutty, and packed with fiber. Just one cup provides up to 30% of your daily fiber intake ??. Parsnips are low calorie, high water and fiber content, vitamin C rich powerhouses that improve gut health and help maintain weight.

Ingredients

  • parsnips, peeled and cut into fries
  • tbsp avocado oil chosen
  • tsp frontier coop Garlic and herb seasoning
  • Avocado oil spray chosen
  • Pinch of Maldon sea salt flakes

Instructions

  • Toss raw parsnip fries in 2 tablespoons avocado oil and garlic herb seasoningΒ 
  • Pour into air fryer basket and spread out evenlyΒ 
  • Fry at 400Β° for 18 minutes, tossing halfway with a few sprays of avocado oil
  • Transfer to platter and sprinkle with maldon salt flakesΒ 
  • Serve with unsweetenedΒ ketchupΒ (1g of sugar and sweetened with balsamic vinegar!)Β 
  • *If not using an air fryer, lay oil coated seasoned parsnips on a parchment lined baking sheet and bake at 400Β° for 30-45 minutes in the oven, flipping half way.
