Ingredients
- cups frozen organic sweet corn
- cups frozen organic shelled edamame
- diced red bell peppers
- diced shallots
- minced garlic cloves
- tablespoons olive oil
- cup lime juice (juice of 1 lime)
- teaspoon honey
- teaspoon salt
- teaspoon ground black pepper
- Fresh cilantro
Instructions
- Using a lidded cast iron or ceramic pan, add 1 tablespoon olive oil to pan over medium heat
- Add garlic and shallots and cook until lightly browned (4 minutes)
- Turn heat to low-medium
- Add corn, edamame, bell peppers and remaining olive oil and cover with lid
- Let cook for 5 minutes
- Whisk together honey, lime juice, salt and pepper
- Pour lime mixture into pan and toss to combine
- Transfer to a bowl and garnish with fresh cilantro
