Edamame Succotash

Edamame Succotash - Living with Ivey

Ingredients

  • cups frozen organic sweet corn
  • cups frozen organic shelled edamame
  • diced red bell peppers
  • diced shallots
  • minced garlic cloves
  • tablespoons olive oil
  • cup lime juice (juice of 1 lime)
  • teaspoon honey
  • teaspoon salt
  • teaspoon ground black pepper
  • Fresh cilantro

Instructions

  • Using a lidded cast iron or ceramic pan, add 1 tablespoon olive oil to pan over medium heat
  • Add garlic and shallots and cook until lightly browned (4 minutes)
  • Turn heat to low-medium
  • Add corn, edamame, bell peppers and remaining olive oil and cover with lid
  • Let cook for 5 minutes
  • Whisk together honey, lime juice, salt and pepper
  • Pour lime mixture into pan and toss to combine
  • Transfer to a bowl and garnish with fresh cilantro
