Nutritional yeast is a vegan’s best friend. This nutty cheesy story addition is a complete protein, meaning it contains all 9 essential amino acids. Nutritional yeast is a delicious source of protein, B vitamins (of which many vegans are deficient) and essential minerals.

In just 2 tablespoons, nutritional yeast provides 5g of protein, 2 grams of fiber, 520% of your RDI (Recommended Daily Intake) of Thiamin, 480% RDI of Riboflavin, 220% RDI of Niacin, 420% RDI of Vitamin B6 and 630% RDI of Vitamin B12.

Ingredients

  • packed cups of chopped kale: Lacinato and Curly Green
  • watermelon radish
  • tablespoons mixed raw spouted seeds: sunflower, pumpkin
  • tablespoon nutritional yeast
  • tablespoons lemon juice
  • tablespoons apple cider vinegar
  • tablespoon coconut aminos
  • tablespoons tahini
  • teaspoon honey
  • finely grated garlic clove
  • cup nutritional yeast
  • cup extra virgin olive oil

Instructions

  • De-stem and wash kale using a salad spinner
  • Using a food processor or knife, roughly chop kale
  • Peel watermelon radish, thinly slice using a mandolin and cut into triangles
  • Whisk together dressing ingredients, or combine in a high speed blender, adding olive oil last and gradually to emulsify
  • Massage dressing into the kale
  • Garnish with watermelon radish slices, micro greens, raw seeds and nutritional yeast, or LWI Pickled Onions
  • Feel free to add a plant based or traditional source of protein like salmon or chickpeas
