Grapefruit Fennel Salad

Grapefruit Fennel Salad - Living with Ivey

Ingredients

  • head of Bibb lettuce
  • cups watercress
  • cucumber, thinly sliced
  • watermelon radish, thinly sliced
  • fennel bulb, thinly sliced
  • grapefruit, peeled and sliced into wedges
  • clementine/mandarin/orange, peeled and sliced into wedges
  • cup sprouted walnuts
  • Mint leaves for garnish
  • cup lemon juice (1 lemon)
  • tablespoons freshly squeezed orange juice (2 large wedges)
  • teaspoons raw unfiltered honey
  • tablespoons dijon mustard
  • tablespoons stone ground mustard
  • cup extra virgin olive oil
  • Directions - whisk together ingredients, adding in the olive oil last and gradually to emulsify into creamy vinaigrette

Instructions

  • Arrange salad on a large plater, beginning with bed of Bibb
  • Add watercress, sliced fennel, cucumber, radishes, grapefruit and mandarine slices
  • Drizzle with vinaigrette
  • Garnish with crushed sprouted walnuts and mint leaves
