Superfood Salad - Living with Ivey

Ingredients

  • Bushel of chopped curly green kale
  • handfuls of baby kale, chopped
  • handful of chopped dill
  • handful of micro-greens
  • sliced watermelon radish
  • Avocado β€œroses” with sesame seeds
  • Raw pepitas (pumpkin seeds)
  • cup white balsamic vinegar
  • tablespoons of dijon mustard
  • teaspoon of Manuka honey
  • Pinch of salt and pepper
  • clove of minced garlic (1 minced shallot is great too)
  • cup of olive oil, emulsified by whisking into the vinegar mixture above
