Asian Cucumber Salad - Living with Ivey

Ingredients

  • english cucumbers, cut lengthwise, seeds scooped out and cut crosswise into crescents
  • sliced avocado, added last
  • cup rice vinegar
  • cup coconut aminos
  • tablespoons lime juice
  • tablespoon grated ginger
  • teaspoon honey
  • cup toasted sesame oil

Instructions

  • Gently combine with avocado
  • Garnish with toasted sesame seeds, picked onions (or raw) and cilantro
