Roasted Salmon - Living with Ivey

Description

1 whole filet of salmon, 1 sheetpan and dinner is on the table in 20 minutes.

Ingredients

  • lb salmon slab, skin on
  • tbsp lemon juice
  • tbsp stone ground mustard
  • tsp honey
  • minced garlic cloves
  • sliced lemon
  • sliced mandarin (or blood orange or navel)
  • oz (2 cups) of green beans
  • Handful of thyme sprigs
  • Sprinkle of cracked pepper

Instructions

  • Preheat oven to 400Β°
  • Pat dry salmon thoroughly and place on parchment lined baking sheet
  • Whisk together lemon juice, mustard and honey and brush generously on salmon
  • Arrange green beans, minced garlic and citrus slices around salmon and drizzle with 1-2 tablespoons olive oil
  • Sprinkle with thyme sprigs and cracked pepper
  • Bake for 15-20 minutes
  • Garnish with flaked sea salt
