INGREDIENTS

  • 0.38 lb salmon slab, skin on
  • 0.5 tbsp lemon juice
  • 0.5 tbsp stone ground mustard
  • 0.25 tsp honey
  • 0.5 minced garlic cloves
  • 0.25 sliced lemon
  • 0.25 sliced mandarin (or blood orange or navel)
  • 4 oz (2 cups) of green beans
  • Handful of thyme sprigs
  • Sprinkle of cracked pepper

INSTRUCTIONS

  • Preheat oven to 400Β°
  • Pat dry salmon thoroughly and place on parchment lined baking sheet
  • Whisk together lemon juice, mustard and honey and brush generously on salmon
  • Arrange green beans, minced garlic and citrus slices around salmon and drizzle with 1-2 tablespoons olive oil
  • Sprinkle with thyme sprigs and cracked pepper
  • Bake for 15-20 minutes
  • Garnish with flaked sea salt
