INGREDIENTS

  • 4 chicken breasts
  • Citrus Marinade/Vinaigrette

  • 3 tbsp freshly squeezed orange juice (1/2 an orange)
  • 2 tbsp lime juice (1/2 lime)
  • 2 tbsp lemon juice (1/2 lemon)
  • 1 tsp honey
  • 2 tbsp Dijon mustard
  • 1 tbsp freshly chopped basil (or 1 teaspoon dried)
  • 1 tbsp freshly chopped parsley (or 1 teaspoon dried)
  • 2 minced garlic cloves
  • 1/2 tsp sea salt
  • 1/4 cup olive oil

INSTRUCTIONS

  • In a large bowl, whisk together marinade ingredients, adding olive oil last and gradually
  • Reserve 1/4 cup of dressing in separate bowl
  • Rinse and pay dry chicken breasts
  • Place each chicken breast between two pieces of parchment paper
  • Using a meat mallot, pound each breast until evenly thinned to 1/2 inch
  • Place all breasts into bowl with marinade and let marinate for at least 1 hour
  • Over medium heat, grill chicken breasts for 4-5 minutes each side
  • Serve with arugula salad dressed with remaining Citrus Vinaigrette
  • Garnish with avocado, pomegranate seeds, and fresh citrus
