INSTRUCTIONS
- In a large bowl, whisk together marinade ingredients, adding olive oil last and gradually
- Reserve 1/4 cup of dressing in separate bowl
- Rinse and pay dry chicken breasts
- Place each chicken breast between two pieces of parchment paper
- Using a meat mallot, pound each breast until evenly thinned to 1/2 inch
- Place all breasts into bowl with marinade and let marinate for at least 1 hour
- Over medium heat, grill chicken breasts for 4-5 minutes each side
- Serve with arugula salad dressed with remaining Citrus Vinaigrette
- Garnish with avocado, pomegranate seeds, and fresh citrus
