"Heritage Extra Virgin Olive Oil
Grown and made by Philip Asquith, a fourth-generation Olive farmer who harvests all of our Oil. He’s the guardian of thousands of gnarled, centuries-old trees—each one lovingly tended, season after season. The Olives are picked gently by hand and pressed immediately to preserve critical freshness and a rich polyphenol content of 385 mg/kg.

The blend includes rare tree varieties—Frantoio, Leccino, Pendolino, and Arbequina—that are nearly impossible to find in the U.S. The result is a luminous green Oil with vibrant, peppery notes softened by rounded fruit. With a high smoke point, it’s perfect for dipping, finishing, roasting, or baking.

Fig Balsamic
We begin with Trebbiano and Lambrusco Grapes, the foundation of traditional balsamic, and ferment them slowly with pressed organic Calabrian Figs, chosen for their syrupy sweetness and dense flesh. The blend is aged in Oak barrels, where time and air work their quiet transformation — bright acidity softening into velvet, sweetness tightening into depth.

The result is a silky, aromatic Balsamic that hums with umami and fruit — equal parts sweet, tangy, and wood-smoked. Drizzle it over grilled Peaches, ripe Tomatoes, roasted Meats, or a slab of aged Cheese. Reduce it gently until it glows like molasses, or finish a dish with just a drop."
