Najeau's olive oil consistently maintains an acidity level below 0.8%, meeting the standard for Extra Virgin classification.

The low acidity in EVOO is indicative of minimal processing and the use of high-quality olives, ensuring the preservation of vital nutrients and bioactive compounds. One of the primary anti-inflammatory agents in EVOO is oleocanthal, a phenolic compound that mimics the effects of ibuprofen by inhibiting the activity of cyclooxygenase (COX) enzymes involved in inflammatory processes.
