One of the most nutrient dense cruciferous vegetables on the planet, bok choy is chock full of vitamin C to boost immunity, selenium to aid in detoxification, supporting cells and protecting against cancer and other disease, calcium and folate to prevent heart disease and protect healthy bones and full of antioxidants to fight inflammation. And it’s light, low calorie and delicious. Needless to say it’s one of my favorite foods and this is my favorite way to prepare it, and only requires 20+ minutes and 5 ingredients.

Ingredients

  • bok choy cabbages, halved
  • tbsp toasted sesame oil
  • tbsp miso
  • tbsp coconut aminos
  • tbsp rice wine vinegar
  • honey

Instructions

  • Preheat oven to 400Β°
  • Wash and dry your bok choy thoroughly
  • Cut cabbage in half, length wise
  • On a parchment lined baking sheet, arrange bok choy and brush evenly with 1 tbs toasted sesame oil
  • Roast for 20 minutes, flipping halfway throughΒ 
  • After 20 minutes, remove from oven and brush with your glaze
  • Roast for an additional 2 minutes
  • Transfer to a plate and garnish with toasted sesame seedsMETHOD
