Shredded Beet Salad - Living with Ivey

Description

With carrots, jicama, apples, golden and red beets and mint. Tossed in a Honey Apple Cider Vinaigrette

Ingredients

  • red beet
  • golden beet
  • large carrots
  • jicama
  • apple (honey crisp or Fuji)
  • cup fresh mint leaves
  • tsp flaky sea salt
  • tbsp apple cider vinegar
  • tbsp lemon juice (1/2 lemon)
  • tbsp fresh orange juice (1 large wedge)
  • tbsp Dijon mustard
  • tsp honey
  • tbsp stone ground mustard
  • cup olive oil
  • Whisk all ingredients together, adding in olive oil last and gradually to emulsify

Instructions

  • Wash and peel beets, carrots and jicama
  • Using a food processor with fine grate blade attached, grate beets, carrots and jicama
  • Using a mandolin, thinly slice apple and dice into matchsticks
  • Combine all grated veggies, apple and mint and toss with Apple Cider Vinaigrette and sea salt
