Shaved Brussels Sprout Salad - Living with Ivey

Description

If you’ve ever had a shaved Brussels sprout Caesar, this is it’s healthier rival. Vegan, gluten free, nutrient dense and delicious.

Ingredients

  • lb Brussels sprouts, outer leaves removed and shaved using slicing blade in a food processor. (You can also use a mandolin or a knife)
  • bunch of lacinato kale, de- stemmed and chopped into strips
  • tbsp tahini
  • tbs nutritional yeast
  • tbsp lemon
  • tbsp acv
  • tbsp maple syrup
  • tbsp Dijon
  • shallot minced
  • cup olive oil

Instructions

  • Toss by hand with tahini dressingΒ 

Garnish with sliced almonds and unsweetened dried currants (can also use raisins)
