Lobster Salad - Living with Ivey

Mayo free, dairy free, gluten free

Using fresh steamed lobster meat and a sweet citrus vinaigrette, this came together in less than five minutes.

Ingredients

  • lb of lobster meat (tails, claws, whatever you have)
  • celery stalks
  • tablespoons chopped chives
  • tablespoons lemon juice (1/2 lemon)
  • tablespoon orange juice (1 large wedge)
  • tablespoons dijon or stone ground mustard
  • tablespoons olive oil
  • Fresh cracked black pepper

Instructions

  • Whisk together mustard, citrus juices and olive oil, adding in olive oil last and gradually while whisking to emulsify into a creamy vinaigretteΒ 
  • Add chopped chives and celery to vinaigretteΒ 
  • Chop lobster into bite size pieces and toss with vinaigrette
  • Garnish with fresh parsley, black pepper and LWI pickled onions (optional)
