2jars (7 ounces each) tuna in olive oil or water, strained (I like Ortiz or Tonnino) * Remember canned goods like fish and beans are cooked IN the can under pressure so you run the risk of plastic and aluminum leaching into the food
2 English cucumbers
1 diced red bell pepper
0.5cup halved cherry tomatoes
0.25 cup halved kalamata olives
1 diced avocado
2 tbsp capers
2 tbsp chopped dill
2 tbsp chopped parsley
INSTRUCTIONS
Slice cucumber in half lengthwise
Using a spoon, scoop out cucumber seeds
Slice cucumber crosswise into crescent shaped pieces 1/4 inch thick (use a mandolin)
