INGREDIENTS

  • 2 jars (7 ounces each) tuna in olive oil or water, strained (I like Ortiz or Tonnino) * Remember canned goods like fish and beans are cooked IN the can under pressure so you run the risk of plastic and aluminum leaching into the food
  • 2 English cucumbers
  • 1 diced red bell pepper
  • 0.5 cup halved cherry tomatoes
  • 0.25 cup halved kalamata olives
  • 1 diced avocado
  • 2 tbsp capers
  • 2 tbsp chopped dill
  • 2 tbsp chopped parsley

INSTRUCTIONS

  • Slice cucumber in half lengthwise
  • Using a spoon, scoop out cucumber seeds
  • Slice cucumber crosswise into crescent shaped pieces 1/4 inch thick (use a mandolin)
  • Combine all ingredients in a bowl
  • Dress with Red Wine Vinaigrette
