Crab and Avocado Salad - Living with Ivey

Ingredients

  • pound of jumbo lump crab meat
  • head of butter or Bibb lettuce
  • cup watercress
  • cubed avocado
  • orange or grapefruit
  • tablespoon chopped chives
  • tablespoon cilantro
  • In a bowl combine all ingredients, adding in olive oil last and gradually to emulsify
  • tablespoons champagne vinegar
  • tablespoons freshly squeezed orange juice
  • tablespoon lemon juice
  • tablespoons dijon mustard
  • teaspoons honey
  • cup olive oil

Instructions

  • In a bowl, gently combine crab meat, avocado and orange or grapefruit wedges
  • Arrange Bibb lettuce leaves and watercress on a large platter
  • Add crab, avocado and orange or grapefruit segments and drizzle with vinaigrette
  • Garnish with chives, cilantro, cracked pepper and my Quick Pickled Onions
