INGREDIENTS

  • 0.5 pound of jumbo lump crab meat
  • 0.5 head of butter or Bibb lettuce
  • 0.5 cup watercress
  • 0.5 cubed avocado
  • 0.5 orange or grapefruit
  • 0.5 tablespoon chopped chives
  • 0.5 tablespoon cilantro
  • Champagne Citrus Vinaigrette

  • In a bowl combine all ingredients, adding in olive oil last and gradually to emulsify
  • 1 tablespoons champagne vinegar
  • 1.5 tablespoons freshly squeezed orange juice
  • 0.5 tablespoon lemon juice
  • 1.5 tablespoons dijon mustard
  • 0.75 teaspoons honey
  • 0.25 cup olive oil

INSTRUCTIONS

  • In a bowl, gently combine crab meat, avocado and orange or grapefruit wedges
  • Arrange Bibb lettuce leaves and watercress on a large platter
  • Add crab, avocado and orange or grapefruit segments and drizzle with vinaigrette
  • Garnish with chives, cilantro, cracked pepper and my Quick Pickled Onions
