Broccoli Salad - Living with Ivey

Description

This flash boiled broccoli salad retains all of its nutrients, providing a healthy dose of fiber, antioxidants and more than your daily recommended Vitamin C intake

Ingredients

  • cups of broccoli florets (3 heads)
  • cup rice wine vinegar
  • cup coconut aminos
  • tablespoon grated ginger
  • teaspoon honey
  • cup toasted sesame oil
  • teaspoons toasted sesame seeds
  • teaspoon crushed red pepper

Instructions

  • Plunge broccoli florets into boiling water and boil for 2 minutes
  • Drain and place in ice bath for 1 minute (large bowl of ice water)
  • Once cool, transfer to paper towel and let dry for 20 minutes
  • In a bowl combine dressing ingredients, add broccoli florets and let marinate in the fridge until ready to eat.
  • Garnish with toasted sesame seeds and crushed red pepper
