INGREDIENTS

  • 1 bushel of kale, washed and de-stemmed
  • 0.5 an avocado
  • Handful of pomegranate seeds
  • Sprinkle of pumpkin seeds
  • 1 tbs chopped dill
  • GARLICKY DIJON VINAIGRETTE

  • 2 tbs lemon juice (1/2 a large lemon)
  • 1 tbs Dijon mustard
  • 1 tsp raw unfiltered honey
  • 1 grated or minced garlic clove (I use a microplane)
  • 0.25 cup olive oil

INSTRUCTIONS

  • Whisk together the dressing, adding in the olive oil last and gradually
  • Using your hands, massage dressing into the kale, coating all the leaves
  • Garnish with avocado, pumpkin seeds and pomegranate seeds.
