Chopped Garlicky Kale Salad
Ingredients
- bushel of kale, washed and de-stemmed
- an avocado
- Handful of pomegranate seeds
- Sprinkle of pumpkin seeds
- tbs chopped dill
- tbs lemon juice (1/2 a large lemon)
- tbs Dijon mustard
- tsp raw unfiltered honey
- grated or minced garlic clove (I use a microplane)
- cup olive oil
Instructions
- Whisk together the dressing, adding in the olive oil last and gradually
- Using your hands, massage dressing into the kale, coating all the leaves
- Garnish with avocado, pumpkin seeds and pomegranate seeds.Β
