Ahi Tuna Salad

Ahi Tuna Salad - Living with Ivey

Ingredients

  • lb ahi tuna steak
  • Salt and pepper
  • tbs toasted sesame oil
  • English cucumber
  • cup cherry tomatoes
  • mango
  • avocado
  • packed cups cilantro
  • tablespoons rice wine vinegar
  • tablespoons coconut aminos
  • tablespoons lime juice (half a lime)
  • teaspoon honey
  • cup toasted sesame oil
  • Blend all ingredients in a vitamix, adding sesame oil last and gradually to emulsify

Instructions

  • Cut tuna steak into 1.5 inch thick strips
  • Salt and pepper each side 
  • Over medium high heat add 1 tablespoon sesame oil to a cast iron pan
  • Add tuna strips and sear each side for 30 seconds to 1 minute
  • Set aside
  • Halve and chop cucumber
  • Halve cherry tomatoes
  • Dice mango
  • Dice avocado
  • Toss with cilantro vinaigrette and set aside
  • Slice tuna into slices
  • Arrange on a plate 
  • Garnish with toasted sesame seeds and LWI sugar free pickled onions.
