Herbed Fish “en Papillote” - Living with Ivey

Ingredients

  • 6 ounce filets (halibut, snapper, any fish you’d like)
  • cup chopped scallions
  • teaspoon freshly grated ginger
  • minced garlic cloves
  • cup fresh herbs (cilantro, parsley, basil)
  • teaspoon sea salt
  • teaspoon black pepper
  • cup olive oil

Instructions

  • Preheat oven to 400°
  • Cut 4 pieces of parchment paper, large enough to wrap each filet
  • Pat dry your fish with paper towel and set aside
  • In a small mixing bowl, mix together all other ingredients
  • Lay filets on individual parchment sheets and speed 1-2 spoonfuls of herb mixture on top
  • Wrap filets up tightly (like a candy wrapper)
  • Bake for 15 minutes
  • Transfer to a plate and carefully unwrap
  • Serve over Sautéed Green Beans
