INGREDIENTS

  • 2 artichokes
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Dipping Sauce

  • 0.13 cup lemon juice (1 lemon)
  • 0.5 tsp honey
  • 2 tbsp Dijon mustard
  • 0.5 minced shallot
  • 0.25 cup olive oil

INSTRUCTIONS

Dipping Sauce

  • Whisk together all ingredients, adding in olive oil last and gradually to emulsify

Artichoke Directions

  • Rinse artichokes thoroughly
  • Trim artichoke leaves to remove pointy edges and remove any small leaves at base
  • Trim stems to 1/2 inch
  • Slice artichokes in half from top to bottom, leaving the inside leaves and hairy bits in tact (you will scoop out after steaming)
  • Using a double cooker/steamer, steam halved artichokes for 45 minutes
  • Remove from steamer and allow to cool before scooping out hairy centers with a spoon
  • Brush artichokes on both sides with olive oil and salt and pepper
  • Using a grill or grill pan over medium high heat, grill artichokes for 3 minutes each side
  • Serve immediately
