Fall Salad - Living with Ivey

Description

This salad just screams fall. Caramelized delicata squash on top of a bed of baby kale sprinkled with pomegranate seeds, pumpkin seeds and drizzled with a maple Dijon vinaigrette makes for a comforting salad.

Ingredients

  • boxes of baby kale
  • LWI Roasted Delicata Squash
  • cup pomegranate seeds
  • tbsp raw sprouted pumpkin seeds
  • cup balsamic vinegar
  • tbsp stone ground mustard
  • tsp maple syrup
  • cup olive oil

Instructions

  • Whisk together all ingredients except olive oil
  • Add in olive oil last and gradually to emulsify
  • Arrange salad and drizzle with vinaigrette
