INGREDIENTS

  • 0.5 - 1 boxes of baby kale
  • LWI Roasted Delicata Squash
  • 0.13 cup pomegranate seeds
  • 1 tbsp raw sprouted pumpkin seeds
  • Maple Dijon Vinaigrette

  • 0.13 cup balsamic vinegar
  • 1 tbsp stone ground mustard
  • 0.5 tsp maple syrup
  • 0.25 cup olive oil

INSTRUCTIONS

  • Whisk together all ingredients except olive oil
  • Add in olive oil last and gradually to emulsify
  • Arrange salad and drizzle with vinaigrette
