Chili - Living with Ivey

Description

Simple ingredients and on the table in under 30 minutes! The Instant Pot makes life all that much easier! You can use any protein you’d like: ground beef, ground turkey, ground chicken, or make it plant based by doubling up on the beans or adding in some chickpeas. Skip the sautΓ© on the beans.

Ingredients

  • onion (red, white or yellow)
  • jalapeΓ±o
  • bell peppers (red, orange, green or yellow)
  • carrots, peeled and chopped
  • tbsp extra virgin olive oil
  • lbs ground turkey, beef or chicken (if going plant based, double up on beans below)
  • oz black beans
  • oz red kidney beans (or pinto)
  • tbsp chili powder
  • tbsp Italian seasoning
  • tsp cumin
  • tsp smoked paprika
  • tsp finely ground black pepper
  • tsp salt
  • minced garlic cloves
  • tbsp Worcestershire sauce
  • cups chopped tomatoes (or 1 jar of tomatoes)
  • oz tomato paste
  • cups broth (vegetable, chicken, beef, or bone)

Instructions

  • Chop onion, peppers and carrots
  • Using theΒ Instant Pot, turn on by hitting sautΓ© for 5 minutes
  • Add in olive oil and chopped onion, peppers and carrots
  • SautΓ© while stirring frequently for 5 minutes
  • Add in ground turkey, chicken or beef and sautΓ© for 5 additional minutes
  • Add in all other ingredients, stir to combine and close lid making sure vent is sealed
  • Hit pressure cook for 20 minutes
  • Release pressure (carefully!) after 20 minutes
  • Serve immediately or use keep warm setting (it gets even better with time)
  • Garnish with fresh cilantro
