Dairy-free, Vegan option, Gluten Free, rice free and low sodium, this is the perfect healthy alternative to the fried rice we love at a Chinese restaurant.

A tip when using frozen vegetables: Frozen vegetables have been blanched (flash boiled) before being bagged so they require less cooking time
Using fresh steamed lobster meat and a sweet citrus vinaigrette, this came together in less than five minutes.

Ingredients

  • oz frozen cauliflower rice (1 bag)
  • shallot, minced or chopped
  • cup frozen edamame
  • large carrot, peeled and thinly sliced
  • teaspoons freshly grated ginger
  • freshly grated garlic clove
  • tbsp toasted sesame oil
  • tbsp coconut aminos
  • egg, scrambled in last (optional)

Instructions

  • Using a large cast iron skillet over medium heat, add 1 tablespoon of toasted sesame oil
  • Add shallot and cook for 1 minute until fragrant, stirring halfway
  • Add in frozen edamame, carrot and sautΓ© for 2 minutes
  • Add minced garlic and ginger and cook for 1 more minute
  • Add in frozen cauliflower and 1 additional tablespoon of toasted sesame oilΒ 
  • Cook for 8-10 minutes, stirring periodically
  • Add in coconut aminos and stir to combine
  • Transfer to bowls and garnish with toasted sesame seeds and fresh cilantroΒ
