Quick Pickled Onions

Zero sugar, clean, delicious, and the perfect addition to just about everything.

In a small saucepan, bring to a gentle boil apple cider vinegar, lemon juice and sea salt.
As soon as it comes to a gentle boil, turn to simmer and simmer for 5 minutes
In a mason jar, add onion slices.
Pour mixture over onions and press down gently using the back of a spoon, before closing jar.
Ready to eat in 20 minutes.
Store in the fridge for up to 3 weeks.
