Quick Pickled Onions - Living with Ivey

Zero sugar, clean, delicious, and the perfect addition to just about everything.

Ingredients

  • red onion, thinly sliced using a mandolin
  • cup apple cider vinegar
  • tablespoons lemon juice (1/2 a lemon)
  • teaspoons sea salt

Instructions

  • In a small saucepan, bring to a gentle boil apple cider vinegar, lemon juice and sea salt.
  • As soon as it comes to a gentle boil, turn to simmer and simmer for 5 minutes
  • In a mason jar, add onion slices.
  • Pour mixture over onions and press down gently using the back of a spoon, before closing jar.
  • Ready to eat in 20 minutes.
  • Store in the fridge for up to 3 weeks.
