Kale Pesto - Living with Ivey

Description

Made with one of my favorite things, nutritional yeast, this pesto is vegan and chockfull of vitamins, antioxidants, omega-3 fatty acids and protein.

Nutritional yeast is a complete protein, meaning it supplies all 9 essential amino acids and in just one tablespoon, it provides 5 grams of protein and more than 500% of your daily B vitamin requirements.

Ingredients

  • cup walnuts
  • packed cups of fresh basil
  • packed cup of kale
  • cup lemon jice
  • garlic clove
  • teaspoon sea salt
  • teaspoon black pepper
  • tablespoons of nutritional yeast
  • cup olive oil

Instructions

  • In a food processor or high speed blender, combine all ingredients, adding in olive oil last and gradually.
