INGREDIENTS

  • 1.6 - 2 eggs
  • 0.05 cup unsweetened almond milk
  • 0.4 minced garlic cloves
  • 0.05 tsp salt
  • 0.4 cups sliced shiitake mushrooms
  • 0.2 sliced shallot
  • 0.4 cups fresh spinach
  • 0.4 tbsp olive oil

INSTRUCTIONS

  • Pre heat oven to 400
  • Whisk together eggs, almond milk, garlic and salt in a bowl and set aside
  • Using a cast iron skillet, add olive oil, mushrooms and shallot and cook over medium heat for 6 minutes, stirring occasionally
  • Add in spinach and cook for 1 minute until wilted
  • Pour in egg mixture
  • Transfer to oven and cook for 15 minutes
