INGREDIENTS

  • 2 cups of cubed watermelon
  • 0.5 small red onion, quartered and thinly sliced
  • 0.5 avocado, diced
  • 0.25 cup fresh mint leaves
  • 0.25 cup crumbled feta
  • Dressing

  • 1 tablespoon fresh squeezed orange juice (1 large wedge)
  • 2 tablespoons lime juice (half a lime)
  • 3 tablespoons olive oil
  • 1.5 teaspoon black pepper
  • 0.5 teaspoon sea salt flakes

INSTRUCTIONS

  • Combine your cubed watermelon, avocado mint and onions with your dressing and let marinate in the fridge for 20 minutes
  • When ready to serve, add feta crumbles and flaked sea salt
