- cups heirloom cherry tomatoes
- peeled shallots
- jalapeΓ±o, seeded
- peeled English or Persian cucumber
- garlic clove
- tablespoon sherry vinegar
- teaspoon salt
- cup olive oil
- Diced tomatoes, cucumbers and red peppers
Instructions
- Add all ingredients, EXCEPT OLIVE OIL, to a high speed blender
- Pulse to combine
- While blender runs on low-medium setting, add in 1/2 cup of olive oil gradually until creamy
- Ddd chopped veggie toppings
- Garnish with drizzled olive oil and salt and pepper
