Gazpacho - Living with Ivey

Ingredients

  • cups heirloom cherry tomatoes
  • peeled shallots
  • jalapeΓ±o, seeded
  • peeled English or Persian cucumber
  • garlic clove
  • tablespoon sherry vinegar
  • teaspoon salt
  • cup olive oil
  • Diced tomatoes, cucumbers and red peppers

Instructions

  • Add all ingredients, EXCEPT OLIVE OIL, to a high speed blender
  • Pulse to combine
  • While blender runs on low-medium setting, add in 1/2 cup of olive oil gradually until creamy
  • Ddd chopped veggie toppings
  • Garnish with drizzled olive oil and salt and pepper
