INGREDIENTS

  • 3 cups heirloom cherry tomatoes
  • 1 peeled shallots
  • 0.25 jalapeño, seeded
  • 1 peeled English or Persian cucumber
  • 0.5 garlic clove
  • 0.5 tablespoon sherry vinegar
  • 0.5 teaspoon salt
  • 0.25 cup olive oil
  • Toppings

  • Diced tomatoes, cucumbers and red peppers

INSTRUCTIONS

  • Add all ingredients, EXCEPT OLIVE OIL, to a high speed blender
  • Pulse to combine
  • While blender runs on low-medium setting, add in 1/2 cup of olive oil gradually until creamy
  • Ddd chopped veggie toppings
  • Garnish with drizzled olive oil and salt and pepper
