Ingredients
- eggs
- avocado
- tsp apple cider vinegar
- tsp dijon mustard
- salt and pepper
- paprika
Instructions
- Add whole eggs to a lidded pot and fill with enough water to cover
- Bring to a boil
- Once boiling, remove from heat and let eggs sit in the water for 10 minutes
- Using a slotted spoon, remove eggs and place into bowl of ice water for 5 minutes
- Peel and half eggs, removing yolks and placing into a mixing bowl
- Combine yolks, avocado, mustard, and apple cider vinegar using a whisk, hand mixer or a fork
- Spoon mixture into halved egg whites
- Garnish with salt, pepper and paprika
