Ingredients

  • lb grass-fed beef, cut into cubes
  • tsp salt
  • tsp black pepper
  • tablespoon olive oil
  • yellow onion
  • garlic cloves
  • cups sliced shiitake mushrooms
  • sweet potato, cubed
  • oz can tomato paste
  • large carrots, chopped
  • cups beef broth
  • tbs Italian seasoning
  • tsp cumin
  • bay leaf
  • tsp brown rice flour
  • tbs balsamic

Instructions

  • Salt and pepper beef cubes
  • Add 1 tablespoon olive oil to pot and press sautΓ©
  • SautΓ© beef for 3 minutes until browned on each side
  • Turn pot off
  • Add all ingredients to the pot, EXCEPT brown rice flour and balsamic vinegar
  • Secure lid and be sure to seal vent
  • Pressure cook for 15 minutes
  • Release pressure carefully and remove lid. Turn pot off
  • Stir in brown rice flour and balsamic vinegar and sautΓ© for 2 minutes to thicken
