Beef and Vegetable Stir Fry - Living with Ivey

Ingredients

  • lbs lean grass-fed beef, cut into chunks or cubes (or substitute certified humane chicken breast)
  • tablespoons olive oil, divided
  • tablespoons toasted sesame oil, divided
  • tablespoons filtered water
  • sliced shallot
  • teaspoon freshly grated ginger
  • gloves of minced garlic
  • head of broccoli (about 2 cups of florets)
  • cups of sliced shiitake mushrooms
  • cup coconut aminos
  • Fresh cilantro and toasted sesame seeds for garnish

Instructions

  • In a large lidded skillet or sautΓ© pan, add 1 tablespoon olive oil and 1 tablespoon sesame oil
  • Add shallots and cook for 2 minutes over medium heat, until translucent
  • Add broccoli florets, mushrooms and water and place the lid on. Cook for 5 minutes
  • Remove lid, add remaining oil, ginger, garlic, coconut aminos, and beef.
  • SautΓ© for 3-5 minutes
  • Transfer to a bowl or plate and garnish with toasted sesame seeds and fresh cilantro.
