Herbed Fish “en Papillote”
Description
“In parchment paper”
Ingredients
- 6 ounce filets (halibut, snapper, any fish you’d like)
- cup chopped scallions
- teaspoon freshly grated ginger
- minced garlic cloves
- cup fresh herbs (cilantro, parsley, basil)
- teaspoon sea salt
- teaspoon black pepper
- cup olive oil
Instructions
- Preheat oven to 400°
- Cut 4 pieces of parchment paper, large enough to wrap each filet
- Pat dry your fish with paper towel and set aside
- In a small mixing bowl, mix together all other ingredients
- Lay filets on individual parchment sheets and speed 1-2 spoonfuls of herb mixture on top
- Wrap filets up tightly (like a candy wrapper)
- Bake for 15 minutes
- Transfer to a plate and carefully unwrap
- Serve over Sautéed Green Beans
